Nirvana Penthouse (which, in our view from its 15th floor needed no tampering) has reinvented itself for the better, courtesy of expertise amassed by Shamsher Wadud, this famed restaurant's founder.

Wadud, an acknowledged authority on cuisines of the subcontinent, has brought forth staggeringly diverse new menus covering just about every corner of Indian and Bangladesh cookery. His food has been relished by Omar Sharif, Cindy and Joey Adams and U.N. diplomats who know.

At our window table overlooking lofty Central Park vistas, we contemplated the fairly priced listings encompassing lunch ($15.95 to $17.95); page after page of the theatre dinner possibilities served continuously ($21.95-$29.95, complete); and myriad, lavish feasts and specialties.

The panoply of exotic breads, appetizers, soups, salads, and special feasts would make even a rajah's eyes pop! After such fanciful dining, classic kulfi (plain, Indian style ice cream) seemed a sensible desert.

Manhattan's Ruth's Chris Steak House, one of the esteemed restaurant group located throughout the world, is Big Apple all the way, thanks to the astute input of general manager Jeffrey Hubbeling, director of operations Walter Perkowetz and his aide Fernando Heredia - all Gotham to their fingertips.

Here, consistently perfect sirloins, ribeyes and T-bones are presented midst a flavorful ambiance that's invitingly New York. An affluent tone is achieved through the spacious interiors, keynoted by paneled rooms, fine oil paintings and generously spaced tables.

The sense of luxury is evident in the outstanding steaks, chops and fish specialties, which come from the kitchen precisely as ordered and are never, ever frozen. Whoopi Goldberg, Bon Jovi, Tony Bennett and Ralph Fiennes have enjoyed the fine food and atmosphere, which includes a cigar-friendly bar that's a favored haunt.

La Strada This very family-run Southern Italian restaurant (papa Franco is chef, helped by his trio of sons) remains as accessible as a summer paperback. Theatregoers enjoy the practically priced dinner; catch a conveniently located show like The King and I; then return for post-prandial dessert and coffee. Open Mon.-Thurs. till 11 P.M. Stage Deli PLAYBILL doffs its hat to this legendary restaurant - traditionally plugged into the theatre community's concerns - which is set to toss a 60th anniversary open house benefiting Broadway Cares/Equity Fights AIDS this summer. (a Saturn showroom, Saturday afternoon, customers and salespeople stroll the floor)

ENTER a couple. A salesperson approaches.

MAN: (to his wife, under his breath) Just let me do the talking and we'll be fine.

SALESPERSON: Hi there. Can I help you?

MAN: (tentatively) Actually... we're just here to look around.

SALESPERSON: Sure. Take your time. I'll be over here if you have any questions.

EXIT salesperson. The man and woman exchange a look.

WOMAN: (softly) Wow...that was kinda weird.

The couple now notices a green sedan STAGE LEFT. The woman hops into the driver's seat, grinning. The man takes a look under the hood. A red coupe STAGE RIGHT at this point catches the couple's eye. They move toward it.

SALESPERSON: (from offstage) Hey - can I get you two anything to drink?
