[[underline]] System in the Household. [[/underline]] The Army household is a business, and the Army wife is the business manager. The keynote of her housekeeping should be "Efficiency". When you are your own maid this routine is nice to follow: 1. After removing the breakfast dishes, clean living room and dining room. 2. Make beds and clean bedrooms. 3. Kitchen: Prepare vegetables for luncheon and dinner and let them cook for awhile as you wash the breakfast dishes. 4. Prepare lunch. Eat. Wash and stack dishes. 5. Leisure: Learn to budget your time so that you can include rest, recreation, personal beautifying and mental improvement in your "Design for Living". 6. Prepare dinner. Dine, clear table and stack dishes in covered container. Wash with breakfast dishes next morning. 7. Leisure for evening: Calls, Movies, Bridge, Reading or an evening at home. [[line]] BUDGET Until you have had at least five or six months experience in running a household, it is futile to make out a budget. It is necessary to have some kind of record of expenditures on which to base a budget. It is difficult to make a general budget that will meet all conditions, since Army people move around from place to place so often. The Army family which earnestly tries to run its establishment on a business basis will find that system and efficiency bring proportionate returns as they do in a striving business. From "The Army Wife" By - Nancy Shea [[line]] MOTHER'S DAY DINNER Tomato juice Baked ham Creamed potatoes Buttered green beans Lettuce salad Thousand Island dressing Chocolate mint ice cream with sauce Coffee [[line]] MAY BREAKFAST Grapefruit Basket of Mixed Fruits Hearty omelet Cowboy Coffee cake Coffee Cocoa for children PLANNING MEALS Menu Planning in advance saves time, money, and the need of thinking each day what to have for the next meal. Always plan your meals when you are hungry and never after having eaten a hearty meal. Most of the buying will be done at the Commissary, but it might be advantageous to make special purchases of foodstuffs in the city on the weekend. It is a good plan to make a personal visit to market once a week. Have a grocery pad and pencil conveniently located in the kitchen and keep a close check on supplies when they begin to get low. [[line]] GARDENING The assignment of garden plots has been employed due to the unfavorable weather conditions. All persons interested in having gardens are asked to purchase their seeds now in order to have them when planting begins. [[line]] QUICK AND EASYS FOR TWO There's more than one way of making cooking for two quick and easy. If you're the kind of person with a flair for efficiency, "cooking double" should appeal to you. Certainly it's just as easy to cook twice as much or more of some foods as just enough. And the next night you really reap the profits--dinner goes together in double-quick time. Cooking ahead doesn't mean brewing up a refrigeratorful of uninspiring leftovers that you're going to look at and wonder, "Now what am I going to do with that?" Rather, it means taking stock of your meals for the week and deciding what you could prepare double of, just as well as not. Refrigerator dough made up on Saturday or an evening when you in will give you hot rolls all week. That's what we mean by letting your head save your meals. If you're going to peel and cook potatoes--monotonous job--cook enough for two or three days. The boiled potatoes will appear again, creamed, au gratin, fried or in casseroles. Mashed potatoes will have a second chance as potato cakes, croquettes, or as as topping for meat pies and casseroles. Immediately following breakfast, you may have time to make a dish of coffee jelly from the coffee left in the pot, or to start a tray of refrigerator ice cream made from one of the packaged mixes. You will learn that cooking for two is not a hard task if you will plan and economize your time.
