Broiled meals are a joy any time of the year. However in the spring this "time-saving" type of cookery should be very popular because a meal can be prepared so quickly.

The recipes below are for just such a meal.

When the busy housewife wishes to be away for the afternoon she can get everything ready for this meal in the morning. All the perishable foods should be covered and placed in the refrigerator until time to cook them. Of course, the meat should be placed in the coldest part of the refrigerator. It is well to cover the meat cake very lightly with wax paper.

The vegetables should be assembled and the cream sauce made ahead of time. As a matter of fact extra cream sauce may be made and stored in a colder part of the refrigerator. It will then be ready for quick preparation of creamed vegetables and cream soups and similar dishes.

The bread and cheese may be in readiness also.

Now, all you need to do to prepare the meal when you come home in the evening is to light the broiler as soon as you come into the kitchen. Take the foods out of the refrigerator and follow the directions. A beverage and salad may be prepared while the meal is cooking.

Everything should be cooked and ready to serve in not more than 30 minutes. the flavor of broiled foods can not be surpassed and broiling often provides a new way to serve left over vegetables.

A SPRING GRILLED MEAL
LAMB PATTIES

1 pound ground lamb, 1 cup soft bread crumbs, 1/4 cup water or milk, 1 teaspoon salt and 1/8 teaspoon pepper.
Blend the ingredients together well. Shape into round cakes or patties about 3/4 of an inch thick.
Preheat broiler 8-10 minutes. Then place meat on lightly greased broiler and cook until nicely browned on one side. Turn and brown on the other side.

COOKING ENTIRE MEAL
When meat browns on one side place bread and carrots on broiler around the meat. Toast the bread lightly on one side then turn it and toast on the other side. Spread with butter and add asparagus according to the recipe.

ASPARAGUS AU GRATIN
4 slices of bread not too fresh, 1 can green asparagus tips or cold left over asparagus, 1/4 cup medium cream sauce, 1/4 cup grated cheese, Butter for the toast.
Toast the bread on both sides and butter it. Arrange asparagus tips on each slice of toast. Partially cover with cream sauce and sprinkle with cheese. Cook under broiler until cheese melts and begins to brown.

CARROTS
6-8 cooked carrots, crushed corn flakes, melted butter, salt and sugar. Roll the cooked carrots in melted butter, sprinkle with salt and a pinch of sugar. Then roll in corn flakes. Cook on broiler with rest of meal until nicely browned.
