Sir;
I have the honor to herewith enclose a slip from the Cincinatti Times which with the following explanation will sufficiently indicate what "bulk meat of the first quality" should be
Bulk Clear Sides, All the bones taken out
Bulk Clear rib sides, containing the sides, only,
Bulk sides, containing ribs and backbone.
Bulk Shoulders,
Bulk meats, are salted, but not smoked, when smoked the same grade go under the name of bacon,
# bone meats of any kind are very difficult to preserve in the climate at this season, unsmoked bone meats cannot be preserved.
