Wine Of Choice
by Peter J. Morrell

Behind the scenic, tree-lined banks of the River Loire, lie vast tracts of vines which have yielded many of France's best white wines since time immemorial.

Sancerre and Pouilly Fumé are two excellent examples of crisply dry Loire whites exquisitely suited for enjoyment with poultry and fish.

Pouilly Fumé made entirely from sauvignon grapes, is quite pronounced in character. Wine lovers have long admired its aggressive, cheese-like bouquet and flinty mouth-filling flavor.

Almost directly across the River Loire from the Pouilly Fumé district lies Sancerre, famous for dry white wine, flowery in aroma and pungent in character.

Both of these Loire wines must be consumed while they retain their youthful freshness. Neither Sancerre nor Pouilly Fumé will take age well.

The true epicenter of the Loire vineyards lies 120 miles down the river around the city of Tours. To the east of Tours is the wine district of Vouvray, where dozens of deep caves were once excavated to serve as wine cellars under the hills facing the Loire. Vouvray wines are primarily semidry, soft and quite subtle in character. They make marvelously refreshing fare for sipping on sunny summer days. Vouvrays must also be consumed while young, since a fresh fruitiness is an inherent part of their nature sparkling Vouvray brings an extra dimension to this delightful wine.
