drawing a ration may receive a bit of meat. This manufacturing process may of course be continued, the only precaution necessary being to economize the fuel by putting on the new mess immediately.
The Manufacture of Corn Bread.
The corn-meal used for manufacturing bread for the destitute, is the very best fresh, white, bolted meal, coarsely ground. The ordinary brick oven is used and also the rectangular bake pans employed in preparing wheat bread.
The material required, for manufacturing 200 pounds of good Corn Bread are
120 pounds Corn Meal
1 pound salt
30 Gallons pure water (more or less)
1/4 pound Lard (for greasing pans)
(I have taken 200 pounds as a basis of calculation to facilitate afterwards a computation of the cost of the ration.)
The materials in the above preperation are mixed thoroughly together into a dough or paste, of the proper consistency. The pans are then filled within an inch of the top with this "dough", and placed in a very hot oven. 2 1/2 to 3 hours will ordinarily suffice to complete the baking. This process may be continued until the requisite number of rations (pounds) are prepared. Coarse meal is the best for baking, and yields more bread than the same weight of fine meal.
