Particular fish that inspires you?
Black sea bass, which is my favorite. There's so much you can do with it.

What and who influenced you to become a chef?
Mom was a good cook, but we ate simply. I never thought about cooking until college, when I took a job in my dorm cafeteria. I feel in love with the kitchen.

Favorite meal at home?
My favorite thing is making banana pancakes with the kids for weekend breakfasts.

Most exciting adventure:
My recent trip to the Arctic Circle in Norway to fish for skrei.

How important is being trendy?
It's important to me to set trends, not follow them.

What do you recognize as the trendiest direction of the culinary scene?
I don't follow trends, however I like that people are trying to eat a little more healthy.

Must-have ingredient:
Premium, imported extra virgin olive oil. It can work as a supporting element or as a highlight. With a good, heavy ten-inch sauté pan you can make almost anything.

Favorite meal away from Oceana?
I'm a chocolate freak, so anything chocolaty for dessert is great.

Cookbook fan?
For sure. My favorite is [[italics]] La Riviera [[/italics]] by Alain Ducasse. My own, [[italics]] School of Fish [[/italics]], will be released this September.

What singles out Oceana as an outstanding seafood emporium?
My variety and freshness of product. And the fact that we make everything in house from scratch. I often bring in live king crabs from Alaska. You won't see them anywhere else.
