How important is being trendy? It's important to me to set trends, not follow them. What do you recognize as the trendiest direction of the culinary scene? I don't follow trends, however I like that people are trying to eat a little more healthy. Must-have ingredient: Premium, imported extra virgin olive oil. It can work as a supporting element or as a highlight. With a good, heavy ten-inch sauté pan you can make almost anything. Favorite meal away from Oceana? I'm a chocolate freak, so anything chocolaty for dessert is great. Cookbook fan? For sure. My favorite is [[italics]] La Riviera [[/italics]] by Alain Ducasse. My own, [[italics]] School of Fish [[/italics]], will be released this September. What singles out Oceana as an outstanding seafood emporium? My variety and freshness of product.
