Low Country Shack With Fence

You couldn't tell from the road but the welcome awaiting you inside could be overwhelming. Inside the fence a freshly swept yard invited you closer to pear trees and inside to green beans and rice (this is South Carolina low country) with ham and red eye gravy and yeast rolls and cobbler of all kinds. Ever had a sweet potato souffle? This setting housed people who were serious about everything, from their garden to the milk cows and hogs. Butchering was a community shared activity from which each participant took home some of the meat. This was a serious work and fun for everybody.
