Tear-down Pasta Sauce --Tear up 4 large cans of tomatoes. --Cut up 10-12 gloves of garlic. --Heat up large Dutch oven; add oil & butter & heat. Do not brown garlic, just warm it in the mixture. --[[strikethrough]]Add onion & sauté.[[/strikethrough]] --Add some red pepper (scant 1 T.) *Don't fry herbs; just let them become infused w. oil. Some thyme & fresh basil, e.g. Also, parsley. --Add crushed up tomatoes. --Add onions (halved) and carrots just to flavor. --Put sauce in a 300° oven to cook down. Can use immersion blender to puree sauce. --Finished sauce is very hearty! **Circus connects generations; is about courage; passes on traditions. *"Hacks"= making do w. what you have. E.g., cooking pasta (in water) in a deep fryer! *Certain cultures bring long traditions, many generations long, to the circus. E.g. Morocco has a strong acrobatic tradition.
