* Project: skimmed milk cheese(Check(sp??))
**Cook is from Genara(sp?)- mlaws "full of water"
--could not make this cheese w. American milk because it is pasteurized. But now can make it with rennet added.
* Skimmed milk is left for oneand night to sour.
* Then add raw milk (from morning milking) to make cheese.

*After awhile, texture is like sour cream.
* Machina is slparating out cream to make skim milk.
* Add rennet; turns milk to cheese. 
* Aukagh - whole - milk cheese
* Both cheeses eaten w. lavagh.
* Nothing is thrown away in this process! whey is sold to the cook's animals.
* cream is preserved in salted water for 6 mos.
