:Facts about countries: in common, both are European language grps, Catalonia means LAND OF CASTLES. Armenia has mountains. FISH IS VERY HEALTHY.

V: No seacoast. Our seafood comes from lakes & rivers. Lake SERVAN HAS TROUT. I'll MAKE FILLET OF TROUT. W/ HAJAR (grain), in a rissoto w/ mushrooms, celery, garlic, Grew up in Lebanon, then Italy, US, then Tuscany and now Armenia. Saute mushrooms in butter

R & F: Bought boat @ 21. Fishermen & cooks. Brought a boat here. Today cooking mackerel.

Ramon: start with picatta. Fish stock, maceral. Smash mix into picatta. Seasoned mackeral with olive oil, salt & bit of cumin.

V: We cook all our dishes w/ [[strikethrough]] parsey [[/strikethrough]] parsley. Add wine to rissoto. Veg. stock - anything to give flavor. Cooking with wine, but not good wine. Risotto has to have a hit to it and some texture, not mush.
