Angel
One of the bakers in Catalonia; started back to the ancestral process of baking and recovering an ancient kind of flour; not a modern bakery but use modern technology, because of their knowledge - they want to connect tradition and innovation.
Fisherman
In 2006 they started to see fishing industry was decreasing, what can we do to improve the situation of the fish; connected fishing knowledge; science and industry. So they created a project to handle the problem. Founded 1st gestion/plan that combines fishermen, scientists and business in all the EU.
[[left margin]] The program runs 10 months/years 5 days/week 11 hours/day
Public project administrations around come to observe them. After 10 years the 1st data is coming back; each year fish increasing. Introduced different nets to catch different populations are  kinds of fish. Encourages reproduction. 
Balearic Islands are replicating their project; now catching more fish in fewer hours.

Close relation w/ fishermen + bread in terms of environment. each specialty is a link in the chain. If one breaks, nothing functions. Prefers to make a better product than more money. Deeds a specialized mill to process the ancient grains. The final client is the most important.
