They use fresh milk right from cow
Chapati -
water, wheat flour, salt
q c. wheat flour for 2 chapatis
lukewarm water
salt (add salt to water & mix first)
No baking powder or baking soda
They have to cook enough food for family & all possible guests
Add water gradually to flour - mix w/hands until smooth
Add vegetable oil (about 1 tsp) & mix again
At home - sometimes they make their oil
Ghee - cholesterol free, smells good
get milk (cow), fuel container half full, leave out 24 hrs,
will be like yoghurt, shake it a lot, take out 
cream. Boil remainder for 2 hrs - will look
like vegetable oil. Let it cool, then put in bottle, Put in frig or freezer.
Dust board, roll out chapati dough
Apply a little vegetable oil, smear it around, cut
into strips about 1 1/2 in. wide. Then roll up strips.
Let it rest at least 10 minutes, cover w/damp cloth.
Then you roll them out & then fry.
To make tea -
Boil water, pour [[crossed-out]]w[[/crossed-out]] milk into water (at least 3/4 c.) 
(about half water & half milk - simmer)
Then add tea (black) - amt. depends on your preference
Then boil more
Then add sugar & boil more
Chapati -
roll out dough again into tortilla size
Put on frying pan - [[crossed-out]]do not add additional oil[[/crossed-out]] 
put some oil on it & then flip to other side
